Bread factory of DIVA has 40 employees which working non
stop; capacities of product rich to 15000 loaves per day which
must be distribution to our customers throw our 9 special
cars.
The technologic processing of production Bread is completely
automatic. Done by professional people.
Now we will show you the principal stages in making bred:
SIFTER: The flour is airy and separate from
impurities come from wheat grinding.

MIXER: Flour with the others ingredient they are
mixed tell obtain dough standard processing.

|
PORTION: The dough it's introduce in the portion
machine where it will be divide with equal quantity, the weight
is regulate in function of requirement.

|
SHAPING: is made manual, the dough is shaped and
put on shelf’s where is going to stay for the yeast
processing.

|
|
FINAL SHAPE: After the dough is yeast, it
will give it the final shape which is as the factory standard
and it will be crusted with a special blade (only for the
LOAF) in the final, after this procedure the dough must be
yeast for another period.

BAKEING: In the final shape and yeast bread
will be introduced in the oven, it will be baking at the right
temperature which is adjusted in function of quantity dough.

TIME OF BAKEING AND COOLING: After the bread
is baked it will be taken out from the oven, pot on the shelves
and taken to the cooling room. The time of cooling is standard.

ORDERS DELIVERY: When the bread is cooled
they put it in the special boxes and prepared for the delivery
to our clients.
Every shift working there are three cars for delivery.
